To properly cut a scallion, you need a sharp knife and a cutting board. Start by trimming off the root end and the tough dark green leaves at the top. Cut the scallion in half lengthwise, then slice it in half again. Slice the scallion thinly, and at a diagonal if you want long, pretty pieces.
Set up your cutting board
The first thing you need to do is set up your cutting board. You’ll want to make sure that it’s nice and level, so your scallions don’t roll around while you’re trying to cut them. You might also want to put a wet paper towel under your cutting board to keep it from slipping.
Next, take a look at your scallions and decide how much you need to chop. If you’re using them as a garnish, you’ll probably only need to chop the white part. But if you’re adding them to a dish like stir-fry, you can use the whole scallion, including the green part.
Cut the root off the scallion
Start by cutting the root off the scallion. You can do this with a knife or with a pair of kitchen scissors. Once the root is removed, discard it or save it for another use (such as making veggie stock).
Next, cut the scallion in half, lengthwise. Then, cut each half of the scallion into thin pieces, working from the root end up to the green part. If you want, you can make the pieces as thin or as thick as you like.
Once all of the scallions are cut, give them a final rinse under cold water. Then, let them drain in a colander or on a clean kitchen towel before using them in your recipe.

Place the scallions in a container

Place the container in the fridge
Once you have trimmed and washed your scallions, you need to store them properly if you want them to stay fresh. The best way to store scallions is in a container with some water. Simply place the trimmed ends of the scallions in a jar or cup with an inch or two of water. Cover the container loosely with a lid or plastic wrap and place it in the fridge. The scallions will last for about a week stored this way.
